100% Whole Wheat Bread (Bosch)

6 Cups Hot Tap Water
2/3 Cup Oil
2/3 Cup of Honey
2 TBsp. Dough Enhancer
2 TBsp. Vital Wheat Gluten

2 TBsp. Kitchen Specialties Tofu
  Drink Mix
2 TBsp. SAF Instant Yeast
4-6 Cups freshly milled whole wheat


  1. Switch to SPEED 1: Add 2 TBsp. salt
  2. Slowly add 6-10 cups of additional whole wheat flour while kneading
  3. Sprinkle in the last of the flour 1/4 cup at a time
  4. When enough flour has been added the dough pulls away cleanly from the sides of the bowl
  5. Knead on SPEED 1 for another 5 minutes
  6. Shape into loaf pans and let rise until the dough doubles in size
  7. Bake at 350 degrees for 30-40 minutes.
  8. **NOTE**I have skipped the dough enhancer and tofu mix, but added an egg when making it for someone allergic to milk. It turned out fine. I really haven't had an bad loaf, although some rose a bit better than others.
